
1 cup sugar
1 stick of unsalted butter, room temperature
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2-3 ripe bananas
2 medium size apples grated (Granny Smith or McIntosh)
1 teaspoon vanilla extract
1 teaspoon of fresh or dried orange zest
1 tablespoon cognac (optional)
Butter bundt cake pan and preheat the oven to 325 F.
Grate apples on a medium grater.
Whisk butter well on medium mixer speed (about 5-7 minutes). While continuing whisking add sugar and salt. When the butter mass becomes fluffy, add eggs one at a time, cognac, vanilla extract, orange zest.
You can mash bananas with a fork or if you are using a good mixer, then just toss pieces of bananas in the butter and eggs mixture. Then add grated apples.
Mix flour, baking powder, and soda and add them in portions to the creamy mixture while continue mixing.
Pour the batter into the pan and bake for 1 hour and 10 minutes. Use a wooden toothpick to check the readiness of the bread. If you insert it into the cake and it comes out dry and clean, that means the cake is ready. Remove the bread from the pan and let it cool down. Enjoy!
