Smashed Brussel Sprouts

1 lbs bag of Brussel sprouts

Salt

Pepper

Chili flakes

Zaatar

50gr butter

1/4 cup vegetable oil 

50 gr grated parmesan cheese

Boil water and add Brussel sprouts and some salt. Let Brussel sprouts cook for 10 minutes, remove them and rinse in cold water and strain. Sprinkle with salt, chili flakes, zaatar and vegetable oil.

Preheat oven to 420 degree. Put the Brussel sprouts on a tray layered with parchment paper leaving space between them. Smash each Brussel sprout with bottom of a cup. Sprinkle with pepper and roast for 15 minutes. Flip them over, add pieces of butter and sprinkle each with a bit of parmesan cheese and roast for additional 15 minutes.
