Paella with sea food



Ingredients

 

Olive Oil or any vegetable oil
1 head of garlic
4 bay leaves
1/2 lb chicken and 1/2 pork
3 large or 6 small red and orange sweet peppers
1 teaspoon of dry thyme or 1/2 teaspoon of fresh chopped thyme leaves
2 large onions, peeled and chopped
8 oz green beans
8 oz green peas
Paprika 
Saffron
Salt
Black pepper
1 1/2 cans Tomato sauce
200 ml White wine
2 ½ cups paella or regular rice
1 to 1 ½  qt chicken stock
4 table spoons parsley, finely chopped
½ lb muscles
½ lb prawns or shrimp
2 fillet of tilapia



Heat a large pan or skillet. Pour vegetable oil in the pan and add minced head of garlic. Sauté until it starts to caramelize.


 

Stir in meat and sausage which were cut into approx. 1 inch cubes. You can mix chicken with pork meat and sausage.  Add bay leaves, thyme, and chopped onions and stir. 









Once meat is seared on all sides, add finely chopped red and orange peppers.



Trim ends of green beans and add them to the pan, add green peas and stir.  Add seasoning and stir well. 





Let it cook for a few minutes and add tomato sauce and dry white wine. After mixture cooks for about 5-7 minutes, add rice, stir. 




Pour chicken stock, make sure to add enough of it to cover the mixture completely. Let it cook for about 15 minutes or until rice becomes al dente and then add finely chopped parsley. Stir rice well, but gently to ensure you don't break the grains.








Add fish cut into strips about 2 to 2 1/2 inches long and stir them into rice.



After letting mixture cook for 2-3 minutes add shrimp and muscles on top of the rice mixture.



Cover the pan and let it cook for about 5 minutes or until all muscles open up and shrimp becomes pink. Remove it from heat and enjoy.
