(Russian Style Cheese pancakes)
12 oz (350 grams) farmers cheese (not too dry and not too watery)
2 Eggs
3 table spoons of sugar
1 pinch of salt
1 pinch of soda
6-7 table spoons of flour (depending on how watery the cottage cheese is and your taste preferences)
3 table spoons of flour to cover sirniki
handful or raisins (optional)
vegetable oil for frying sirniki
Mix well cheese, eggs, sugar and salt with a spoon or a spatula.
Add flour and then soda.
Mix in raisins
Using two tablespoons roll the dough into balls, drop them into flour and roll in it and flatten them.
Warm up a large pan on a medium hit, pour some vegetable oil and cook sirniki for about 4 minutes or until golden on each side. You can cover the pan with a lid for couple minutes to ensure that sirniki is fully cooked inside as well.
Serve hot/warm with condensed milk or sour cream
