Fluffy Waffles with Eggs



3 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon table salt
¼ teaspoon sugar 
2 cups of flour
4 large eggs, separated
2 cups buttermilk
4 tablespoons butter
1 teaspoon vanilla extract





Mix in a large bowl flour, baking powder, soda, salt, and sugar. Whisk together egg yolks and buttermilk in a separate bowl. Beat egg whites to the consistence that if you turn bowl over the eggs won’t fall down.

Combine flour and egg mixture together using a whisk. Melt butter and stir in vanilla extract, add it to the flour and egg mixture. Carefully stir in egg white mixture just until it blends in. Don’t mix it too hard so the butter will stay fluffy.

Spray waffle iron with oil and pour batter. Cook waffles until waffles are golden brown and crisp. Warm up oven until 200° and keep waffles in it for half an hour.

Chop 50 gram Greek Manoury cheese, 4 scallions and dill, beat eggs and combine them with cheese and greens, add salt and pepper to taste. Hit the skillet on medium high, add 1 teaspoon of vegetable oil and cook egg mixture for stirring until cooked for about 5 minutes or so.
Add sausage or beacon.
