Street Corn Smashed Potatoes


2 lbs Small potatoes          
2 ears of fresh corn
1 jalapeno pepper cleaned and chopped
Oil
Salt
Pepper
Everything but the Elote seasoning
Chili lime seasoning
1/2 cup mayo
1/3 cup sour cream
2-3 table spoons lime juice
Cholula Sauce to taste

Cotija cheese
Cilantro

Cook potatoes for about 10 minutes after water starts boiling. Place potatoes on a generously oiled backing sheet. Smash potatoes with the bottom of a cup. Season with salt, pepper, and everything but the Elote seasoning (you can get it at Trader Joe's or Shoprite). Bake at 450 degrees for about 35 minutes flipping halfway through until the potatoes become nice and crispy. 



Warm up pan, add oil and fresh corn, chopped jalapeño pepper, everything but Elote seasoning and chili lime seasoning. Cook until it's nicely browned. 






For sauce: mix mayo, sour cream, lime juice, salt and Cholula sauce.

Transfer potatoes to a serving dish, sprinkle them with the sauce, cover with corn, add more sauce, then sprinkle with Cotija cheese crumbles, some lime juice, chopped cilantro, and chili lime seasoning. Enjoy!
